I love Cheddar Cheese Soup, but I hate to cook, so I guess LeCellier is on the itinerary for my next trip. Good thing Jimmy loves it there, because I drag him there every trip

I make the Canadian Cheddar Cheese Soup about every two months.
It is very time consuming to dice up all the ingredients. My warning is do not consider substituting orange cheddar cheese for the White. It totally changes the taste. Tip: Sam's Club White Cheddar is the most economical that I have found. When I make it, I feed the neighborhood.

Hope they have the little samples in the kiosk for Food and Wine Festival again this year. You can almost HEAR your arteries clogging while you're slurping it, but I just slurp louder to drown out the clogging sounds

You will not see nor taste the onion. It cooks down so much when you are stir frying the veggies. The taste of onion is buried by the bacon and cheddar cheese.

The chopping of veggies and cooking them down and the shredding of the cheese takes several hours! I've gone to doing that step the day before and putting in the fridge in zip locks and cooking the next day. Very time consuming, but sooooooo good, it is worth it.
