Angela, someone just mentioned to me that Kona at the Polynesian Resort would be a great cup of coffee for you. And, I have to agree that the coffee is pretty darn good there!
And, a nice stroll around the Grand Ceremonial House or if it's not too cold or too hot, a nice stroll around the beach and/or gardens there at the Poly would be a fantastic way to spend a late afternoon or evening at WDW!
I haven't had the coffee at the Poly, but have also heard it's good. Luckily, we had a coffee maker and could make our own. When out in the parks, I didn't even bother trying any because I had read so much about it being awful - Nescafe. And, it was truly sweltering, so even I didn't want any. I'm really not even that picky about it. There have been several questions/answers on the Moms Panel on the Disney site about this, if you find you want more detailed info.
The best place to get a cup of coffee at Disney is a couple Monorail Stops away from the Magic Kingdom... Disney's Polynesian Resort. The Kona Cafe serves a gourmet Kona Blend Fresh Roasted and served Daily. It is a cup of java goodness. Trust me. I am a self proclaimed coffee diva!
One more vote for Kona. We were paying attention to the coffee the trip we stayed at the Poly and none could match to Kona. I'm pretty sure I remember a nice little coffee kiosk pretty close to the monorail entrance. If your going to the Magic Kingdom, you could walk over to the Poly from the TTC (10 minute walk) get the coffee and jump on the monorail to the park.
Kona is definitely one of the best places for coffee. My wife loves that. She also likes The Boardwalk Bakery because they have several different flavors and types of coffee, some mild and others more rich and bold. Pretty good food items there as well.

One wish I have for Disney (EPCOT) that they would have different coffees and teas in each land.
I haven't tried the Kona coffee, but I did try the coffee shop in the lobby of the Contemporary. I don't recommend it. I am anything but an expert, but it reminded me of Folger's instant coffee. I will definitely have to swing by the Poly next time we're there and try it out.

The in-room coffee at the Swan and Dolphin is Starbucks African Kitmanu, and I like it a lot. Also on the Boardwalk, pretty close to the bakery, there's a shack called Joe's. It's not open all day, usually just for the breakfast rush and after dinner. The coffee there is marginally better than what you'll get in the parks.

I think that is a brilliant idea. I don't know why they don't do that. Perhaps something in the January time frame. They could do a "coffee's of the world" at Epcot similar to what they do with the wine.
