I've read about the fact that there could be some upcoming changes at the dining options at the Mexican pavilion.
Word is that the cantina (outside counter-service) is going to be demolished and in its place will be a two story eatery that will be somewhere between counter service and upscale restaurant similar to the current San Angel (inside table service). The restaurant inside (Currently San Angel Inn) will become an upscale eatery similar to Jiko or Maya Grill.
Inside the Mexico pavilion, the jewelry shop will become a "fajita bar/tequila bar". The section where Kidcot has been will become the new jewelry shop. Or, for those that remember, it will become a shop once again. The fajita bar will begin construction this spring.
Aw, don't knock down the Cantina! I have spent some of the best sunsets EVAH sitting at the Cantina with a mango margarita and some guacamole and chips. What a shame to upscale it - where will we get our churros?
I love the Mexico pavilion and I think that the combo of having the sit down inside and the cantina outside works well. But, I can also see this being a great addition to the pavilion. As long as the 2-story cantina replacement isn't an eyesore and completely covers the look of the pyramid.
I think the idea of a 2 story eatery sounds good. As for an eyesore, I don't see where the imagineers would let that happen. The Mexico pyramid is like a landmark. One of the great things about the world showcase is the ability to see the representations of each country from everywhere.

We have lunch or dinner at San Angel Inn at nearly every trip to Epcot. But, I understand that change is sometimes needed and am actually kinda excited about the rumored changes. But, we'll see.
I love the Pavillion, but I can see where this is going. It is such a popular place and sometimes it is tough to get in there, so Disney is building to help capacity. Mexican food is much less expensive than other foods to prepare, and it is very popular, so the more people you can accomodate there, the better for customer satisfaction and for profitability. I'm all for it. I also don't think that the imagineer would do anything that would detract for the pyramid. It will just enhance what is there in some way.

You'll have to let us know if you notice anything different about the pavillion when you are taking your visit in about 2 weeks.
Come evening that place takes way to long to be waited on. They did open a adult beverage stand across the way from it which helped a bit. A bar area would be a great addition inside, it is a wonderful place to dart out of the rain. I can't imagine 2 story how would that not block the view around the lake.
